Pale Hefe
- Step 00 | Prepare yeast starter:
- 20 oz water
- 12 oz Briess Extra Light Golden DME
- 4.25 oz Wyeast #3068, #3056, or #3333 yeast
- Step 01 | Bring 2 gallons of water to 152F
- Step 02 | Add and steep at 152F (no higher than 155F) for 30 mins:
- 12 oz German Wheat Malt
- 8 oz German Munich Malt
- 4 oz U.S. Victory Malt
- Step 03 | Strain grains into another pot, sparge with 1 gallon water, add:
- 6 lb Liquid Malt Extract (Wheat)
- Step 04 | Bring to 152F (no higher than 155F), boil for 30 mins
- Step 05 | Boil for 7 mins and add:
- 1 oz Hallertau or Mt. Hood hops
- 0.5 oz Orange peel
- 0.5 oz Lemon zest
- Step 06 | Cool quickly over ice, sparge grains with remaining water
- Step 07 | Add yeast starter, pitch and mix to aerate:
- 12 oz Briess Extra Light Golden DME
- Step 08 | After 1 week in primary, transfer to secondary, add (if desired):
- 1 oz Hallertau or Mt. Hood hops
- 0.5 oz Orange peel
- 0.5 oz Lemon zest
- Step 09 | After 2 weeks in secondary, bottle
- Step 10 | Bottle ferment for 1-2 weeks depending on carbonation etc.
