Granite IPA

  • Step 00 | Prepare yeast starter:
    • 20 oz water
    • 12 oz Briess Extra Light Golden DME
    • 4.25 oz Wyeast 1056 American Yeast
  • Step 01 | Bring 2 gallons of water to 152F
  • Step 02 | Add and boil at 152F (no higher than 155F) for 30 mins:
    • 12 oz U.S. 40l Crystal Malt
    • 6 oz German Munich Malt
    • 4 oz U.S. Victory Malt
    • 1 oz German Roasted Barley
  • Step 03 | Strain grains into another pot, sparge with 1 gallon water, add:
    • 3 lb Munton's Extra Light DME
    • 3.3 lb Briess Light Malt Syrup
  • Step 04 | Bring to 152F (no higher than 155F), boil for 30 mins
  • Step 05 | Add hops, boil for 7 mins:
    • 0.75 oz Columbus
    • 0.75 oz Willamette
    • 0.5 oz Magnum
  • Step 06 | Cool quickly over ice, sparge grains with remaining water
  • Step 07 | Add yeast starter, pitch and mix to aerate:
    • 12 oz Briess Extra Light Golden DME
  • Step 08 | After 1 week in primary, transfer to secondary, add dry hops:
    • 1 oz Amarillo
    • 0.5 oz Magnum
  • Step 09 | After 2 weeks in secondary, bottle
  • Step 10 | Bottle ferment for 1-2 weeks depending on carbonation etc.
