Pumpkin Ale

Prep Work

  • Step 01 | Prepare yeast starter:
    • 20 oz water
    • 12 oz Extra Light Golden DME
    • 4.25 oz Wyeast 1056 American Yeast
  1. Bring water to boil in Erlenmeyer flask
  2. Add DME and reduce heat to 152F (no higher than 155F) for 30 mins
  3. Cool and pitch yeast at about 70F, cover with tinfoil


  • Step 02 | Prepare pumpkin juice:
    • 3 gallons water
    • 6 lbs fresh roasted pumpkin (rind and seeds removed)
  1. Roast pumpkin in oven at 350F for 30 mins
  2. Bring water to boil in brew kettle
  3. Add pumpkin, reduce heat to 152F (no higher than 155F) for 30 mins
  4. Cool and strain back into gallon jugs


Brew Day

  • Step 01 | Roast in oven at 350F for 30 mins:
    • 5 lbs fresh pumpkin (rind and seeds removed)
    • 20 oz water
  • Step 02 | Bring 2 gallons of pumpkin juice to a boil
  • Step 03 | Reduce heat to 152F (no higher than 155F), cook for 30 mins:
    • 12 oz U.S. 40l Crystal Malt
    • 6 oz German Munich Malt
    • 4 oz U.S. Victory Malt
    • 1 oz German Roasted Barley
  • Step 04 | Strain grains into another pot, sparge with 1 gallon pumpkin juice, add:
    • 3.3 lb Amber Liquid Malt Extract
    • 2 cups brown sugar
    • 1 cup molasses
    • 1 cup maple syrup
  • Step 05 | Bring to a boil, reduce heat to 152F (no higher than 155F) for 20 mins
  • Step 06 | Add to pot, cook for 10 mins:
    • 5 lbs fresh roasted pumpkin
  • Step 07 | Remove pumpkin, add hops and spices, cook for 7 mins:
    • 0.75 oz Columbus hops
    • 0.75 oz Willamette hops
    • 0.5 oz Magnum hops
    • 1 tsp ginger
    • 1 tsp allspice
    • 1 tsp cinnamon
    • 1 tsp nutmeg
    • 1 tsp vanilla extract
  • Step 08 | Strain over ice bucket, sparge grains over bucket with remaining water
  • Step 09 | Pitch yeast starter and mix to aerate
  • Step 10 | Add remaining 1 lb fresh pumpkin to wort
  • Step 11 | After 2 weeks in primary, transfer to secondary, add dry hops:
    • 1 oz Amarillo hops
    • 0.5 oz Magnum hops
  1. Add spices and pumpkin if necessary
  • Step 12 | After 4 weeks in secondary, keg it :))))
